Stilton fondant pears

Sweet poached pears with bubbling blue cheese make a great combination in this unusual dessert recipe from Michael Moore

  • 150 ml water
  • 150 g sugar
  • 2 whole firm pears, peeled
  • 20 g butter
  • 20 g brown sugar
  • splash of white wine
  • 30 g stilton cheese
  • 1 tbsp icing sugar


1. Put the water and sugar into a saucepan, heat until the sugar melts and bring to the boil. Reduce the heat and add the pears. Poach the pears for 15 minutes or so, until soft. Cut the pears in half and scoop out the central core.

2. Melt the butter in a frying pan and add the sugar. Stir until the sugar has dissolved. Add the white wine and cook until lightly caramelised.

3. Place the pear halves into the pan, cut side down and cook for 45 seconds. Turn the pears over and cook for a further 45 seconds. Remove the pears from the pan.

4. Divide the cheese between the pear halves, dust with icing sugar and grill until golden brown.
