Stir-fried duck with chillies

The zing of hot chillies from Little Green Men will help balance some of the duck's fattiness, in this recipe from Gary Rhodes

Stir-fried duck with chillies

  • 2 tbsp sesame oil
  • 2 red onions, finely sliced
  • 2 red chillies, finely chopped
  • 4 heads pak choi, sliced
  • 2 tbsp olive oil
  • 4 duck breast, skinned and finely sliced
  • 100 g salad leaves
  • 1 lime, juice only
  • 2 tsp soy sauce
  • 4 honey
  • 200 g glass noodles, cooked according to packet instructions


1. Heat the sesame oil in a wok and add the red onions, chillies and pak choi. Stir fry for 3-4 minutes, or until the pak choi has wilted. Set aside.

2. In a separate pan, heat the olive oil until smoking, then add the sliced duck breasts and stir fry for 1-2 minutes, or until browned and cooked to your liking. Add the duck to the wok with the pak choi and stir through.

3. Add the salad leaves, the lime juice, soy sauce and honey. Toss well to coat, then stir in the glass noodles, pile onto a plate and serve.
