Ingredients

  • 400 g caster sugar
  • 900 ml water
  • 100 ml white wine
  • juice of 1/2 lemons
  • 2 vanilla pods, split lengthways

Method

1. Heat the sugar, water and wine with the lemon juice in a saucepan.

2. Bring to the boil and strain through a fine sieve or muslin.

3. Scrape out the inside of the vanilla pods into the syrup, mixing well.
