- 4 egg yolks
- 2 1/2 tbsp caster sugar
- 75 ml stout
- chocolate ice cream, to serve
1. Set a bowl over a pan of simmering water. Add the egg yolks to the bowl and start whisking. Add the sugar, then slowly pour in the stout, whisking all the time.
2. Beat the mixture over this gentle heat for about 5 minutes, until light and foamy.
3. Pour over chocolate ice cream and serve.
