1. Make a strawberry puree by putting a handful of fresh strawberries in a pan with a few tablespoons of sugar and some water. Cook on a gentle heat until the strawberries are extremely soft and broken down.
2. Pass the mixture through a sieve and chill.
3. Pour a little of the strawberry purée into champagne flutes - ¼ to ½ way up. Top up with chilled prosecco.
4. Stir and garnish with a strawberry on the side of the glass.
