Strawberry Cheesecake Shortbread

  • 100 g mascarpone
  • 100 ml double cream
  • 25 g caster sugar
  • 1 vanilla pod, split and seeds scraped out
  • 1 punnet strawberries
  • 12 shortbread biscuits
  • icing sugar, for dusting


1. Whisk the mascarpone, cream, caster sugar and vanilla seeds until smooth and creamy. Hull the strawberries and cut them into halves if large.

2. Place 1 shortbread biscuit on each of the four dessert plates and top each with a spoonful of the mascarpone mix. Add a layer of strawberries. Repeat the layers once more, and top with the remaining biscuits. Dust with icing sugar and serve straight away.
