Summer lamb pasta

Aaron Craze gives his lamb dish a touch of summer with asparagus, peas, courgette and a touch of mint sauce

Summer lamb pasta

Ingredients

  • 3 tsp oil
  • 225 g lean lamb, leg steaks, cut into strips
  • 50 g asparagus, sliced
  • 100 g peas
  • 1 tbsp mint sauce
  • 1 tbsp honey
  • 150 g tagliatelle, cooked and drained
  • 1 courgette, sliced

Method

1. In a wok or large pan heat 2tsp of the oil and cook the steak for 3-4 minutes until browned. Add the asparagus and peas and cook for a further 3-4 minutes.

2. Mix together the remaining oil, mint sauce and honey and add to the pan with the cooked hot pasta. Mix thoroughly with the lamb and courgette and heat for 1-2 minutes.

3. Serve straight away with some crusty bread.
