Sweet Potato Mash with Lemon and Mustard

Ingredients

  • 450 g sweet potatoes, chopped
  • 55 g butter
  • juice and zest of 1 lemons
  • 2 tbsp wholegrain mustard
  • black pepper

Method

1. Bring some salted water to the boil in a medium saucepan. Add the sweet potato and boil until soft.

2. Drain the sweet potatoes and mash with the butter. Add the juice and zest of the lemon, wholegrain mustard and season. Mix well and serve.
