Tacchino in carrozza  (egg-fried bread stuffed with turkey, cheese and cranberry sauce)

  • 4 tbsp cranberry sauce
  • 4 slices thick white bread
  • 100 g cheddar cheese, grated
  • 100 g cold turkey, sliced
  • 3 eggs
  • 1 pinches black pepper
  • 6 tbsp Italian olive oil

Method

1. Spread the cranberry sauce on two slices of bread. Top each slice of bread with Cheddar cheese and turkey and top with the other bread slices forming two sandwiches. 2. In a bowl, beat the eggs and season with salt and freshly ground pepper. 3. Heat the olive oil in a large frying pan. Dip the sandwiches in the egg mixture and fry in the olive oil for approximately 30 seconds on each side, allowing them to crisp. 4. Drain on kitchen paper, cut each sandwich in half to form triangles, and serve immediately with some flavoured crisps of your choice.
