  • 5 clove garlic, finely chopped
  • 5 cm ginger, finely chopped
  • 1 large onion, chopped
  • 4 large chillies, chopped
  • 150 g carrots, chopped
  • 50 g shallots, chopped
  • 5 tbsp chillies, bean paste
  • 8 tbsp soy sauce
  • 2 tbsp chilli oil

For the noodles

  • 400 g udon noodles, flat
  • 2 tbsp vegetable oil

Method

1. Put all the ingredients except the noodles into a large saucepan and cook over a medium heat for 90 minutes, or until the beef is tender.

3. Stir in the oil. Spoon the noodles into a dish and ladle over the beef. Scatter with coriander and serve immediately.
