- 100 g unsalted butter
- 2 tangerines, finely grated zest and juice
- 2 tbsp orange liqueur
- 75-100 g caster sugar
- 2 tbsp cognac, or brandy
1. In a bowl, cream the butter with the tangerine juice and zest, orange liqueur and caster sugar until the mixture is light and pale.
2. Gradually beat in the cognac, then taste and adjust the sweetness as desired.
3. Transfer to a plastic box and chill for up to 3 weeks. An hour or so before serving, take the box from the fridge and allow the butter to soften.
