Tarragon, Lemon and Garlic Hotdog

Aniseed-like tarragon and citrus flavoured mayo gives a refreshing bite to Mike Robinson's meaty snack

Tarragon, Lemon and Garlic Hotdog

  • 1 baguettes
  • 2 large frankfurter

For the tarragon, lemon and garlic mayo

  • 3 tbsp mayonnaise
  • 1 lemons, juice
  • 1 tbsp Dijon mustard
  • 1 handfuls chopped tarragon


1. Place the mayonnaise, lemon juice, mustard and tarragon leaves in a bowl and stir well.

2. Warm a baguette in a preheated oven, then using the handle of a wooden spoon, hollow out a sausage-sized hole through the centre of the baguette. 

3. Heat the frankfurters through in a pan of simmering water, about 2 minutes.

4. Transfer the mayonnaise into a squeezy bottle and squirt it generously into the hollowed baguette. Fill the baguette with the hot frankfurter sausages and serve at once.
