Tarragon Scrambled Eggs

Tarragon Scrambled Eggs

Ingredients

  • 4 eggs
  • 2 tsp tarragon, (fresh or dried)
  • 40 g butter, cubed
  • toast, to serve

Method

1. Lightly beat the eggs, then pass through a sieve to remove any threads. Add the tarragon and beat again. Season.

2. Melt half butter in pan. Add the eggs, and cook over a geltle heat, stirring constantly. Stir in the remaining butter and serve on toast.
