Tartine provençale

Ingredients

For the tartine Provençale:

  • splash of olive oil
  • 2 clove garlic, chopped
  • ½ red onions, finely chopped
  • 400g canned flageolet beans, rinsed
  • 12 cherry tomatoes, halved
  • 2 slices of focaccia
  • 1 tbsp capers

Method

1. Heat the olive oil in a heavy-based frying pan and add the garlic, red onion, flageolet beans and cherry tomatoes. Fry for 3 minutes until warmed through.

2. Meanwhile, griddle the focaccia bread.

3. Pile the flageolet mixture onto the focaccia and sprinkle with capers.

4. Serve immediately.
