Thai salmon salad

Thai salmon salad

  • 175 g bean sprouts
  • 5 tbsp freshly chopped coriander
  • 4 spring onions, cut into strips
  • 50 g cashew nuts, toasted and roughly chopped
  • 1 bird's eye chilli, finely sliced
  • 100 g mangetout, shredded
  • 1/4 Chinese lettuce
  • 1/2 small red pepper, deseeded and finely sliced
  • 200 g salmon, fillet, cooked, cooled and flaked

For the dressing

  • zest and juice of 1 limes
  • 3 tbsp sesame oil
  • 2 cm piece of fresh root ginger, finely grated


1. Toss all the salad ingredients together in a large bowl, taking care not to break up the salmon flakes too much.

2. To make the dressing, place all the ingredients into a screw-top jar and shake vigorously to mix. Pour over the salad and gently toss to serve.
