The Dollar Burger

A hard-to-beat classic from David Van Day: juicy burgers, onions and potato wedges with all the essential trimmings

For the burger:

  • 3-4 floury potatoes, such as King Edwards or Maris Piperunpeeled
  • 4-5 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 450 g lean minced beef
  • sweet chilli sauce, to taste
  • few drops of tabasco
  • flour, for binding
  • black pepper

For the garnish:

  • soured cream and chives
  • freshly grated cheese
  • shredded iceberg lettuce
  • sliced tomatoes
  • ketchup
  • tomato and cucumber relishes


1. Put the potatoes in a saucepan with enough salted water to cover. Bring to the boil, then simmer for 5 minutes until barely tender. Remove the skin and slice the flesh into wedges.

2. While the potatoes are cooking, heat 1 tablespoon of the oil and half the butter in a frying pan. Add the onion and fry over medium-high heat, stirring, for about 10 minutes until golden. Set aside and keep warm.

3. In a bowl, combine the meat, chilli sauce and Tabasco. Season with salt and pepper. Add a sprinkling of flour to bind, and mix well with a fork. Mould into two burgers.

4. Heat 1 tablespoon of oil in a frying pan over high heat. Add the burgers and fry for 5-12 minutes, depending how well you like them done.

5. Heat the remaining oil and butter in another pan over medium-high heat. Add the potato wedges and fry, turning regularly until golden brown. Season with salt and pepper.

6. Place the burgers on serving plates and top with the onions. Serve with the potato wedges and garnishes of your choice.
