Toad-In-The-Hole with Cheddar and Spring Onion Mash

  • 8 pork sausages
  • 2 tbsp olive oil

For the batter:

  • 2 eggs
  • 140 g plain flour
  • 300 ml milk
  • 1/2 tsp dried mixed herbs
  • black pepper

To serve:

  • grated cheddar cheese
  • spring onion mashed potato


1. Preheat the oven to 200°C/gas 6.

2. To make the batter, whisk the eggs, flour and milk in a bowl. Season well, add the herbs, then leave to stand for a few minutes.

3. Meanwhile place the sausages in a large baking dish. Add the oil and turn the sausages so they are coated. Place in the oven and roast for 10 minutes.

4. Remove from the oven and pour in the batter.

5. Continue to cook for a further 30 minutes until the batter is well-risen and brown.

6. Serve with grated Cheddar cheese and spring onion mash.
