Tofu with Ginger Caramel and Lime

Fresh lime juice, ginger and brown sugar caramel transform humble, healthy bean curd into an exciting snack evocative of Southeast Asia

Tofu with Ginger Caramel and Lime

  • 5 tbsp brown sugar
  • 225 ml water
  • 2 slices ginger, peeled and finely chopped, plus a little extra finely grated or shaved, to garnish
  • 100 g fresh silken tofu
  • 2 tiny wedges lime or lemons


1. Place the sugar and water in a small saucepan and place over a low heat. Stir until the sugar dissolves, then add the finely chopped ginger. Raise the heat under the pan and bring the syrup to a boil. Simmer steadily for 10-15 minutes, stirring occasionally, until the syrup has become a caramel sauce thick enough to lightly coat the back of a spoon - you should have about 5 tablespoons of sauce.

2. Meanwhile, cut the tofu into neat cubes and place on a serving dish. Sprinkle with a little finely grated ginger. When the caramel sauce is ready, turn off the heat and allow the sauce to cool slightly. Then pour it through the sieve over the cubes of tofu. Serve with the wedges of lime or lemon to squeeze over the tofu just before eating.
