Tomato and basil salad

A classic and refreshing salad from Angela Hartnett that makes a great match for steak

Tomato and basil salad

  • 500 g tomatoes, preferably heritage
  • 500 g cherry tomatoes
  • 1 bunches basil
  • 1 bunches oregano, picked

For the dressing

  • 2 tbsp red wine vinegar
  • 2 garlic cloves, crushed
  • 180 ml olive oil
  • 1 tsp dijon mustard

Tips and Suggestions

Heritage tomatoes come in a wide variety of shapes and colours and can be found at specialist green grocers


1. Chop the tomatoes and place in a salad bowl or on a plate, season with sea salt and freshly ground black pepper.

2. For the dressing - Put the vinegar into a bowl with the garlic, season and mix well until the salt is completely dissolved. Add the olive oil and mustard and then whisk until combined.

3. Drizzle over the tomato salad and tear some basil over the top. Sprinkle with picked oregano and serve
