Tomato and Raisin Relish

Ingredients

  • 225 g plum tomatoes
  • tbsp baby capers, rinsed
  • 2 tbsp large raisins, halved
  • 1 shallot, finely chopped
  • 2 tbsp thyme, leaves only
  • 30 g toasted pine kernels
  • juice of 1/2 lemons
  • 3 tbsp extra virgin olive oil
  • black pepper
  • 8-12 slices Denhay air-dried ham

Method

1. To make the relish, simply combine the ingredients together in a large bowl and season well with a little salt and plenty of freshly ground black pepper.

2. Arrange the ham on an attractive serving plate, scatter over the relish and serve at once.
