Tomato butter

Ingredients

main:

  • 5 plum tomatoes
  • 250 g unsalted butter, softened

To serve:

  • garlic salt
  • leaves basil

Method

1. Remove the core from the tomatoes and put them into boiling water for 10 seconds. Remove and dip them immediately into iced water. Peel and deseed them.

2. Finely chop the flesh and beat into the butter, until the butter is smooth. Refrigerate until required.

3. To serve, spread onto bread, sprinkle with garlic salt and scatter with basil leaves.
