Tomato Salsa

Ingredients

  • 1 onion, diced
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 4 tomatoes, chopped
  • 250 ml tomato juice
  • 2 tsp dried red chilli flakes
  • 5 tbsp white wine vinegar
  • 2 tbsp brown sugar
  • 1 tsp cornflour
  • 2 tbsp water

Method

1. Warm the onion, peppers, tomatoes, tomato juice, chilli flakes, white wine vinegar and brown sugar a saucepan.

2. Combine the cornflour with the water and add to the simmering salsa. Stir until thickened before leaving on one side to cool before serving.
