Tomato sauce with goats cheese, anchovies and rocket

Ingredients

  • 2 tbsp olive oil
  • 20 g anchovy fillets
  • 20 g small capers
  • 20 g black olives, pitted
  • 500 ml basic tomato sauce
  • 45 g goats' cheese
  • handful wild rocket
  • parmesan shavings
  • salt and black pepper

Method

1. Heat the olive oil in a saucepan and fry the anchovies until they have broken down.

2. Stir in the capers and the olives, then pour in the tomato sauce and adjust the seasoning if necessary. Simmer gently for five minutes.

3. Crumble the goats' cheese into the sauce.

4. Garnish with rocket and Parmesan shavings, and serve with penne pasta.
