For the mayonnaise

  • 2 medium egg yolks
  • 1 tsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 175 ml vegetable oil
  • 1 dried red chilli, crushed
  • 2-3 anchovies, mashed
  • 1 garlic clove, crushed
  • a few drops tabasco
  • 1 small pinch saffron
  • squeeze lemon juice
  • 3-4 cornichons, chopped

Great sandwich fillings

  • potato and onion bread
  • bresaola
  • ham
  • smoked streaky duck
  • air dried duck
  • coppa di parma
  • salami, with garlic
  • salami, with olives
  • emmental cheese, or gruyere cheese
  • buffalo mozzarella
  • tomatoes
  • salad leaves

Tips and Suggestions

Choose a good crusty bread. Then pile the sandwich high with your own selection of charcuterie, hams, cheeses, salad and most importantly the mayonnaise.


1. For the mayonnaise: Separate the egg yolks and add the dijon mustard to the bowl, then the white wine vinegar. Very slowly drizzle in the oil, whisking all the time. Then add the crushed chilli, mashed anchovies, garlic, tabasco, saffron, add lemon juice to taste and finally add the chopped cornichons.

2. To assemble the sandwich: Once the mayonnaise is ready, spread the bottom layer of bread with a good dollop and then pile on your choice of ingredients. Make sure to remember a middle layer of bread, more mayonnaise and carry on piling.
