Trio of salsas

A trio of salsas - fiery tomato, tomatillo and sweet mango salsa make great party dips

Ingredients

For the tomato salsa:

  • 2 jalapeño peppers, or mild green chillies
  • ½ red onions, diced
  • 300 g ripe tomatoes, diced
  • 2 limes, juiced
  • 1 tbsp sea salt, to taste
  • handful of fresh coriander leaves, finely chopped

For the tomatillo salsa:

  • ½ red onions, diced
  • 1 chipotle en adobo chilli, finely minced
  • 400 g tomatillos, diced
  • 2 limes, juiced
  • 1 tbsp sea salt, or more to taste
  • handful of fresh coriander leaves, finely chopped

For the mango salsa:

  • 2 ripe mango, diced
  • 4 spring onions, chopped into fine rings
  • 2 limes, juiced
  • 1 tbsp sea salt, or more to taste
  • a handful fresh mint leaves, chopped finely
  • a handful fresh coriander leaves, chopped finely

Tips and Suggestions

Tomatillos, which have a lovely sour flavour and are used for salsa verde, are very difficult to find fresh in the UK. They have husks, a bit like physallis fruit. You remove the husks and wash them. You can buy tinned tomatillos here.

Chipotle en adobo, is a smoked jalapeño in sauce, it can be bought in small tins. They will last forever in the fridge and you only need a small amount in each dish.

Method

For the tomato salsa
1. Roast the jalapeño pepper until slightly blackened, then peel off the skin, remove the stem and seeds and chop very finely.
2. Mix all of the ingredients together in a bowl and serve.

For the tomatillo salsa:
1. Mix all of the ingredients together in a bowl and serve.

For the mango salsa:
1. Mix all of the ingredients toghether in a bowl and serve.
