Tropical fruit brochettes with vanilla bean syrup

Skewers of juicy tropical fruit drizzled with vanilla scented syrup makes a delightful dessert in this wonderful recipe from Andrew Nutter

Tropical fruit brochettes with vanilla bean syrup

  • ½ pineapples
  • 1 mango
  • small handful of mint leaves
  • 1 punnet of strawberries
  • 1 punnet of raspberries
  • mixture of seasonal fruits

For the vanilla bean syrup:

  • 1 vanilla pod, split
  • zest of ½ lemons
  • 150 g caster sugar
  • 200 ml water
  • few drops of rose water
  • small handful of clean, unsprayed rose petals


1. Cut the fruits into neat cubes and thread alternately on to wooden kebab skewers.

2. Place the vanilla, lemon, sugar and water and simmer until the mixture is light and syrupy.

3. Remove from heat and add the rose water.

4. Drizzle over the fruit brochettes and leave until ready to serve.

5. Scatter with rose petals.
