Ingredients

Main:

  • 300 g tapioca, Soak
  • 1 litres milk
  • 500 ml double cream
  • 12 egg yolks
  • 1 vanilla pod
  • 150 g caster sugar

Method

1. Soak the tapioca in 500ml of the milk to reconstitute it, and then wash and drain.

2. Heat the cream with the remaining milk and vanilla pod. Add the washed tapioca and cook until thick and tender.

3. Whisk together the egg yolks and caster sugar and combine with the tapioca. If the mixture becomes too thick, then add a little milk.

4. Allow the tapioca to cool, and then pour into a serving dish. Serve with an assortment of tropical fruits.
