  • cardamom pods
  • 2 cloves
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 600 ml water
  • 2 tsp leaves holy basil, dried
  • honey, to taste

1. Remove the cardamom seeds from their husks, before roughly crushing the seeds along with the cloves. It's best to do this using a mortar and pestle.

2. In a heavy-bottomed saucepan, dry-roast the pounded cloves and cardamom seeds, with the cumin and fennel. As soon as they start smoking, add the water and holy basil.

3. Bring to the boil, reduce the heat and simmer for 2-3 minutes. Remove the pan from the heat.

4. Sweeten to taste with honey and serve hot.
