- half cucumber
- 250 ml Greek yogurt
- handful of mint, tough stalks removed, leaves chopped
- 1 clove garlic, finely chopped
1. Peel alternate strips of skin from the cucumber. Slice the flesh lengthways into quarters. Remove the seeds and chop the flesh.
2. Tip the yoghurt into a bowl. Mix in the remaining ingredients and the cucumber.
3. Serve with the falafel.
