Vanilla waffles with fresh mango and palm syrup

Warm vanilla waffles, ripe mango and vanilla scented syrup make a really special start to the day, or a heavenly dessert

Vanilla waffles with fresh mango and palm syrup

  • 2 large ripe mango, peeled and sliced
  • oil, for cooking

For the waffles:

  • 500 g plain flour
  • 150 g ground almonds
  • 100 g sugar
  • 2 tbsp honey
  • 100 g melted butter
  • 4 eggs
  • 450 ml milk
  • seeds from ½ vanilla pods

For the syrup:

  • 100 g palm sugar
  • 50 ml water
  • seeds from ½ vanilla pods


1. Place all the ingredients for the waffles into a food processor and whiz until smooth. Allow the batter to rest for at least 20 minutes.

2. Heat a waffle iron and brush with a little oil, spoon enough mixture into the iron to fill the grooves.

3. Close the lid and cook for 2-3 minutes until golden brown. Remove and leave to cool. These waffles can be reheated in the oven.

4. To make the syrup, place all the ingredients into a saucepan and boil for 3-4 minutes, until the liquid starts to thicken slightly. Allow to cool.

5. To serve, reheat the waffles and place onto warm dessert plates, allowing 3 per person. Top with the mango slices, drizzle with the delicious syrup and serve immediately.
