Waldorf salad

Ingredients

  • 60 ml zero-fat yogurt
  • 1 tsp concentrated orange juice, or concentrated apple juice
  • 1/2 tsp curry powder
  • 250 g celery, diced
  • 375 g red apples
  • 250 g red grapes
  • 300 g chickpeas, cooked and drained
  • 60 g Italian parsley, chopped

Method

1. Mix the yogurt, orange juice and curry powder together in a large bowl.

2. Add the remaining ingredients and toss well. Refrigerate until ready to serve.
