Warm Berry Compote

Ken Hom's simple fruit dessert is flavoured with vanilla and a hint of basil, and best served with cream or ice cream

Warm Berry Compote

  • 100 g sugar
  • 150 ml water
  • 1 vanilla pod, split lengthways
  • 175 g strawberries
  • 175 g raspberries
  • 175 g blueberries
  • 2 tbsp unsalted butter
  • 3 basil


1. Using a non-stick or coated wok, bring the sugar and water to a boil, add the vanilla pod and simmer for 10 minutes. Remove the vanilla pod and save for future use.

2. Add the berries and butter and simmer for 2 minutes, just enough to warm and not to cook them.

3. Remove from the heat, add the basil, stir gently, transfer to a warm bowl and serve at once with whipped cream or ice cream.
