Warm blackberries with cheats brown bread ice cream

  • 500 g blackberries
  • 1½ tbsp caster sugar
  • 2 slices brown bread
  • vanilla ice cream
  • sprigs of fresh mint, to decorate


1. Place the sliced bread in a blender and blitz to crumbs. Fry in a dry frying pan until golden brown - or bake in an oven set to 200°C/gas 6 for 10 minutes.

2. Heat up a small pan on the stove then add the blackberries and the sugar. Cook for about 1 minute until the berries are warm but not too mashed.

3. Spoon the berries into the serving bowls and top with a scoop of vanilla ice cream. Sprinkle the breadcrumbs all over the ice cream and berries. Serve with a sprig of mint to garnish.
