  • 300 ml double cream
  • 1 tbsp brandy
  • 250 g dark chocolate
  • 1 tbsp golden syrup
  • 30 g unsalted butter

Tips and Suggestions

This recipe works best with chocolate that has no more than 50-55% cocoa solids, as anything higher creates a sauce that is to strong. You can also use a 50/50 combination of 70% solids dark chocolate and good quality milk chocolate.


1. Pour the cream and brandy into a saucepan and heat until almost boiling.

2. Add the chocolate, syrup and butter and stir until the chocolate has melted and the sauce is smooth and glossy. Serve warm.
