Warm Jersey Royal Salad with Honey Dressing

  • 450 g jersey royal potatoes, scraped
  • black pepper
  • 55 g diced red peppers
  • 2 tbsp finely chopped chives

For the warm honey dressing:

  • 4 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 2 cloves garlic, crushed
  • 1 cm ginger, finely diced
  • zest of 1/2 limes
  • 1 tsp Dijon mustard
  • 2 tbsp red wine vinegar


1. Place the Jersey Royals in a saucepan, cover with water, season with salt and bring to a boil. Cook the potatoes until tender, around 10-15 minutes; drain.

2. Mix the olive oil with the honey, garlic, ginger, lime zest, mustard and vinegar.

3. Using a fork very lightly break the warm potatoes. Add the peppers and chives and mix in the honey dressing. Season with salt and freshly ground pepper.
