Welsh rarebit

Alex Zane shares his favourite cheese on toast recipe a melted mix of cheddar, mustard and Worcestershire sauce on farmhouse bread
Welsh rarebit

  • 25 g butter
  • 25 g flour
  • 100 ml milk
  • 1 tsp English mustard
  • 1 tbsp Worcestershire sauce
  • 1 egg yolk
  • 200 g cheddar cheese, grated
  • 2 thick slices of farmhouse bread, toasted

For the salad

  • 6 pickled onions, roughly chopped
  • 1 tomato, roughly chopped
  • 1/2 cucumber, roughly chopped
  • splash olive oil


1. Gently melt the butter in a saucepan, then add the flour. Stir constantly and cook for 2 minutes. Remove from the heat and add the milk, little by little, while stirring. Once all the milk is incorporated, cook the sauce out until thickened.

2. While the sauce is still warm, beat in the mustard, Worcestershire sauce, egg yolk and cheese. Spread this mixture thickly over the slice of toast and grill until golden.

3. For the salad: mix together the pickled onions, tomato and cucumber. Serve alongside the rarebit.
