- 200 g wild garlic
- 200 g leaves of any other fresh herbs, such as parsley or chives
- 200 g hard cheese, such as parmesan
- 200 g hazelnuts
- olive oil, for drizzling
Tips and Suggestions
This recipe freezes very well, just pour the mixture into an ice cube tray and pop out the cubes a few hours before you are ready to use them.
Wild garlic pesto is great in salads, served with soups, mixed in to mashed potatoes or as a sauce for pasta.
1. Place all of the leaves and herbs into a bowl and blend using a stick blender. Strain off any juices before adding the cheese, nuts and a good pinch of salt.
2. Mix well to combine and drizzle with olive oil to taste.
