Ingredients

  • 225 g shortcrust pastry
  • 300 ml milk
  • 25 g fresh white breadcrumbs
  • 100 g unsalted butter
  • 50 g ground almonds
  • 25 g unrefined caster sugar
  • 1 lemon, grated zest only
  • 3 eggs

Method

1. Preheat the oven to 180C/gas 4. Roll out the pastry and line 16 individual tartlet tins.

2. Pour the milk into a saucepan and bring to the boil. Stir in the breadcrumbs and leave to stand for 10 minutes.

3. Beat in the butter, ground almonds, sugar, lemon zest and egg.

4. Spoon the mixture into the tins and bake for 20-25 minutes, until set. Serve warm, with some clotted cream.
