  • Prep Time: 30 minutes plus 30 mins chilling
  • Effort: medium

  • 225 g butter, softened
  • 225 g sugar
  • 1 egg
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 620 plain flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 60 whole blanched almonds
  • red food colouring, optional, for decorating

1. Preheat the oven to 160ÂșC/Gas 3.2. In a large mixing bowl beat together the butter, sugar, egg, almond extract and vanilla extract until well mixed.3. Sift together the flour, baking powder and salt and mix into the butter mixture, blending well.4. Wrap the cookie dough in cling film and rest in the refrigerator for 30 minutes.5. Working with one quarter of the dough at a time (and keeping the remainder refrigerated) roll heaped teaspoons of the dough into narrow finger shapes.6. Press an almond firmly into the end of each cookie dough finger shape for a finger nail. Squeeze in the centre of the cookie to form a knuckle shape and cut slashes for lines. If you want to paint the nails red, do so with red food colouring diluted with water and brush it on.7. Place the decorated cookies on a lightly greased baking sheet and bake for 20-25 minutes, until pale golden.8. Cool on the sheet for 3 minutes then cool on a wire rack. Store the cooled cookies in an airtight container.
