- 2 yellow peppers
- 250 g ricotta cheese
- 1 tbsp caster sugar
- pinches salt
1. Remove the stalk and seeds from the peppers and coarsely chop the flesh.
2. Tip the peppers into a blender and add the ricotta cheese, caster sugar and a pinch of salt; process until smooth.
3. Transfer to an ice cream machine and churn until frozen - this should take about 20 minutes. One it has frozen, store the ice cream in the freezer in an airtight box.
